- 4 large egg whites
- 1 teaspoon corn starch
- 2.5 cups confectioner's sugar
- food coloring (optional)
- Place the egg whites and corn starch in a bowl and beat at medium high speed for 5 minutes.
- With the machine running, add the sugar a little at a time as you beat for 10-12 minutes. It should form stiff peaks and be very shiny.
- (Optional: You can add your choice of color here.)
- Drop teaspoons full on parchment paper an inch apart form each other. (They can also be squeezed through piping bags to make fancy shapes.)
- Place into oven and bake for 2 hours.
- When cookies are done, lift them off the parchment paper. If they stick at all, return them to the oven for another 30 minutes to finish drying out.
Makes about 36 meringues
